Try setting the DocBook stylesheet parameter 'default.table.width' to
'auto'. The default value is 100%, which is forcing the extra width.
To get the Saxon version, try this command:
java -cp {your-path-to}/xep/lib/saxon.jar com.icl.saxon.StyleSheet -t
